This position is responsible for all assigned tasks related to monitoring the ACM and CM make for both phase cookers including but not limited to; vat pasteurizers, analyzing equipment. Ensure the correct addition & documentation of ingredients including but not limited to: Salt, NFDM, cream, UF, vinegar, rennet, starter buffer, cultures. Record & interpret data to make informed decisions and / or recommendations for optimum cheese making conditions.…
